Banana Bread Brownies (Candida Cleanse Diet Friendly/No Sugar/No Grains)

Preheat oven 325⁰ Fahrenheit

 

4 Large Eggs

1 Tablespoon Pure Stevia (with no sugar alcohols added)

1 Stick Butter, melted (do not use margarine or butter substitute)

1 Cup Plain Yogurt (with no sugars added)

2 Tablespoons Banana Extract

1 Teaspoon Vanilla Extract

1 Cup Soy Flour (pure soy, no grains added)

½ Cup Ground Flax Seed, fine

1 Teaspoon Baking Soda

½ Teaspoon Sea Salt

½ Cup Chopped Walnuts

 

In the blender add eggs and stevia, blend for 2 to 3 minutes, as it is blending pour the melted butter in slowly.  Pour into a large mixing bowl. Add the yogurt, banana extract, vanilla extract, soy flour, ground flax seed, baking soda, salt and walnuts.

 

Mix gently and slowly, making sure to mix baking soda thoroughly throughout the batter, and mixing all lumps out of the batter – without over mixing it.  Mix slowly – if you stir too quickly your yogurt will turn runny, ruining your batter, and you also do not want to deflate your fluffed eggs.

 

Taste your batter.  Make sure that it is sweet enough – now is the time to add extra stevia – but gently.

 

Grease your baking dish, I used pure coconut oil and an 8x8 glass baking dish.

 

Bake for 20 – 30 minutes at 325⁰.  Mine took 32 minutes.
