Chick Pea/Garbanzo Bean Flour Chocolate Chip Cookies

Sugar Free / Gluten Free / Perfect for the Candida Cleanse Diet

  • 2 ½ Cups Garbanzo Bean Flour / Chick Pea Flour

  • 1 Teaspoon Baking Powder

  • 1/8 Teaspoon Sea Salt

  • ½ Cup Butter at Room Temperature

  • 1 Cup Xylitol

  • 1 Tablespoon Vanilla Extract

  • 2 Large Eggs

  • ½ Cup Chopped Walnuts

  • 4 Ounces Chopped Pieces of an Unsweetened Chocolate Bar

 

Preheat oven to 350⁰ Fahrenheit

 

Thoroughly mix together all dry ingredients: flour, baking powder, and salt, set aside.  Cream butter and xylitol together.  Add vanilla and eggs, mix well.  Combine dry ingredients to the butter and egg mixture.  Mix well.

 

Add walnuts and chocolate pieces.

 

If you do not want the cookie to have a gritty consistency, let your cookie dough sit overnight – cooking the next day.  I like the gritty consistency, it gives the cookie a nutty feel. 

 

Spoon out the cookie dough onto a greased cookie sheet about 1 to 2 inches apart.  My batch made 15 cookies.

 

Bake for about 10 to 15 minutes.

 

Mine baked for 14 minutes.  I take mine out at the first sign of the edges browning.  I do not like hard cookies.  If you like your cookies a little harder, let them cook for a bit longer.

 

In the video I made on baking these cookies, I chopped my chocolate pieces a little too large.  The taste of the unsweetened chocolate overpowered the cookie – so I sprinkled about a half teaspoon of xylitol on each cookie… they turned out great!
